Yam Kale Hashbrowns



These are my new favorite food! I'm not a big fan of yams in their mashed or baked form but I love them like this. They taste really good even without the bacon too! Great way to get your greens in if you are like me and not a huge fan of salads.





Prep time: 10 minutes
Cook time: 20 minutes
Serves: 2


Ingredients:
  • 3-4 pieces of bacon
  • 1 medium yam
  • 3-4 leaves kale or chard
  • 1/2 onion
  • 1-2 cloves garlic
  • 1 tbsp thyme
  • 1/2 tsp oregano
  • sea salt to taste (if desired)


Start by adding bacon into frying pan and cooking to desired crispiness. Then chop the yams and put them into a steamer to cook. While bacon is cooking, chop up onions, garlic, and kale/chard. Once bacon is done cooking remove it from pan and add the onions straight onto the bacon grease in the pan. Cook until soft and then add garlic. While these are cooking, chop up the bacon. Add thyme and oregano on onion and garlic, stir in, and then add kale and fully cooked yams to the pan. Cook for approximately 5 minutes or until the kale becomes tender. Add in the chopped bacon and add a sprinkle of sea salt if desired, stir it all up and then serve hot.
